A tribute to my mom, Virginia Ruby Walker Carr
 
 
 
 

Mama was a country girl: she raised us six kids almost alone. My Dad worked
away, and only came home two weekends a month.
 

She raised a garden, and knew her "wild greens," which we ate a lot of.

  There was plenty of blackberry cobbler, strawberry shortcake, and apple pie, if us kids
were willing to do the picking!
 
 
 
 

Tubs of water had to be carried for wash day, and everything was hung on a line, winter
or summer.

She never wore new shoes. As a rule, she used us girls wornout ones.
She never saw the inside of a beauty parlor, or wore fancy clothes.
Her jewelery consisted of a watch, her wedding band and one pair of earrings.

There was no such thing as wash and wear... if you wore it - she ironed it first.

When I was 12 years old, and had double pnuemonia, she was there by my bed each time I
opened my eyes, night or day.

Once she turned back the clock one hour so my Dad wouldn't know I was late from a date.
I married this fella!

She never learned to drive so usually if we went anyplace we walked... but oh those couple miles
to church were such fun! Singing with mama made it such a short trip. Gave us time to practice
for those, "specials," we sang with mama in church.

She listened to the stories we told to each other at bedtime,
and played "judge" when we had our Play competitions..
And only by looking back do I realize that tho she was fair and never cheated,
each team seemed to win equally!
 
 

To mama, right was right, and wrong was wrong, and we'd better learn the difference in a hurry!

Mama loved roses.

And mama told me about Jesus when I was six years old.

She taught us to laugh,love, live,and play...being around mama was fun.

Mama's gone home now to be with her Lord,
and the six of us miss her every day, but especially on Mothers Day, and her Birthday.

And for mama we share the following recipe for her favorite cake.

Italian Creme Cake

1/2 cup Margarine
1/2 cup shortening
2 cups granulated sugar
5 eggs, seperated
1 cup butter milk
1 tsp. soda
1 /2 tsp salt
1 tsp. vanilla
2 cups flour
1 can coconut
1 cup chopped walnuts

Have ingredients at room temperature. Cream margarine, shortening
and sugar... add egg yolks and beat. Combine buttermilk, soda
and vanill. To cream mixture add milk and flour alternately, beating
well.Add coconut and nuts. Beat egg whites til stiff and fold in. Divide
among 4 greased and floured  9" layer pans. Bake for 30 min. at 350 degrees.

Cream cheese frosting

1 pkg. cream cheese
1/4 stick margarine
1/2 tsp vanilla
1 box confectioners sugar

Combine cream cheese and margarine, and beat smooth. Beat in Vanilla, and sugar
until creamy. Makes enough to frost and fill the four layers.
